Tortellini Soup

I have been a definite slacker on the blog front...
Luke and I have been in the middle of purchasing our first home - which is deifnitly a lot of work as we have found out.

This recipe was something I came up wtih and I absolutly adore....Best of All so does Luke!

Here are the basics....
1 package of fresh tortellini (I use whole grain)
1/2 package of fresh spinach
1 cup of diced yellow onion
1 container of Chicken Broth (I use low sodium kitchen basics)
Then for the extra - I use chicken sausage or ham (pre-cooked) - basically whatever is leftover and about a cup is best.

Cook the spinach and onions with the broth on medium high heat for about 7 to 8 minutes. Then add the other ingredients to the pot and cook for about 20 minutes.
This makes about 2 meals for us. I freeze the leftovers and you can heat them up for a great quick night meal!
