Last night I did not have the energy to cook anything... but instead of going out I made something up last minute....I came up with a Mexican Pot Pie and now I think it will be one of our staples!
Mexican Pot Pie ( one for now and one for later)
2 - 8 or 9 inch pie crust ( I got mine at whole foods- they come in packages of two)
1 - 14 oz can of diced tomatoes (no salt)
1 - package of frozen corn
1 - 14 oz can of black beans
1 - package of pre-cooked chicken strips (any type of ready made chicken strip will do - I normally look for ones with low sodium and no marinade)
1 tsp. of cumin.
1 tsp. of chili powder
1 tsp. of minced garlic (I used dry powder to make things simple)
2 tbsp. minced or diced onion ( I used dry since I didn't have any fresh)
1 cup of low fat mexican cheese
Dice the chicken strips into little pieces. Drain Tomatoes and Black Beans and pat dry. Combine tomatoes, black beans, frozen corn, diced chicken, cumin, chili powder, garlic, and onion in a bowl. Distribute mixture evenly amongst the 2 pie crusts. Put 1/2 cup of cheese on frist pie and 1/2 cup of cheese on the second pie.
Put tin foil on one pie and freeze for later!
Bake the other pie at 350 degrees for 30 to 45 minutes until lightly browned and crispy. DELICIOUS! Serve with a little cilantro, sour cream, and shredded lettuce!
