Dinner and Wine Night with Friends!

I used a few leftovers for this dish from making baked ziti the week before.... It was easy enough that I could prepare it when I got home from work and still be ready for dinner and wine at 7 p.m.

Simple and Easy Lasagna (for 6)

3 links of pre-cooked chicken sausage (italian style)diced
1 jar of classico marinara sauce with basil
1.5 cups of fat free ricotta cheese
1 tbsp. of italian seasoning
1 package of frozen spinach
3/4 cup of mixed italian cheese
7 no boil lasagna noodles

Step 1 - Combine Ricotta cheese with frozen spinach in a medium bowl with 2 tbsp of italian seasoning.
Step 2- Lightly spray a 9 by 13 inch glass casserole dish with PAM. Layer with noodles (you will have to break one up to get the edge). Layer with classico sauce and diced sausage, then spread the ricotta mixture evenly. Repeat 1 time. Layer noodles on top and spread the remaining marinara on top of the noodles with 3/4 cup of mixed italian cheese.
Step 3- Bake at 350 degrees for 35 to 45 minutes until lightly golden.
