On the menu for tonight is one of my favorites...old bay baked chicken! super easy to make and full of flavor.
What you need....
2 boneless-skinless chicken breasts
3/4 cup of heart smart bisquick mix
1/2 tbsp of garlic powder
2 tbsp of old bay seasoning
1/2 cup of buttermilk (if no buttermilk combine 1 egg with 1/2 cup of skim milk)
1 tbsp of margerine
What to do...
Heat oven to 425 degrees.
Put 1 tbsp of margerine in a 8 by 8 glass baking dish.Heat in oven until melted.
While heating baking dish, combine bisquick mix, garlic powder and old bay seasoning in a storage sized ziploc bag. shake it up.
Put buttermilk in a shallow dish and coat the chicken breast,one at a time. Put each one Separatly into the ziploc bag and shake until chicken breast is completley coated. Then repeat.
Place coated chicken breasts in baking dish and bake for 30 minutes. Flip chicken and bake for 10 minutes until chicken temperature registers 165 degrees.
Serve with salad and potatoes and enjoy!
