Quick and Easy Sloppy Joe

Everyone needs a great quick and easy sloppy joe recipe when you have a hungry man or a kid in the house!
My version is healthy, quick, satisfying and relatively inexpensive. What more can you ask for!

Quick and Easy Sloppy Joe


1- 16 oz can of black beans (low sodium)
1- 16 oz can of dark red kindney beans (low sodium)
1- 16 oz can of sweet crisp yellow corn (in water)
1- 16 oz can of petite diced tomatoes (not salt added)
1/2 cup of brown sugar (dark or light)
1 1b. of ground beef (feel free to do 1/2 lb of ground beef and 1/2 lb of ground turkey)
2 tbsp tomato paste
1- 8 oz can of tomato sauce
1/2 cup chopped celery
1/2 cup chopped carrots
1/2 cup diced onions
1 tbsp minced garlic
1 tbsp worcestershire sauce
1/2 tsp chili powder

To cook in slow cooker:
Brown the ground beef and onions. Add in all ingredients, except celery and carrots.Put in Slow Cooker and cook for 6 to 8 hours on low. Add celery and carrots to crock pot 30 minutes before serving.

Dish up and Enjoy!

To cook in dutch oven:
Brown the ground beef and onions in dutch oven. Add in all ingredients, except celery and carrots, and cover. Simmer on low for 30 minutes. Add celery and carrots 15 minutes before serving and cover letting simmer.

Dish up and Enjoy!

This dish is great. You put approximatly 1/4 cup of mixture on each roll! This leaves a lot of leftovers which you can freeze for up to 3 months.

I normally do 1 cup of mixture in each freezable container. This serves two with a side dish of potatos and veggies.


What can I make with 1 cup of Sloppy Joe mixture?

1) Tater Tot Casserole: Put 1 cup of Sloppy Joe mixture into the bottom of a baking dish. Sprinkle with frozen tater tots. Slice up 1 reduced fat string cheese and sprinkle on top. Bake for 15 minutes at 375 degrees.

2) Sloppy Joe Shepherd's Pie: Put 1 cup of Sloppy Joe mixture into the bottom of a baking dish. Spread mashed potatos on top of mixture. (I buy frozen potatos that I mash into mashed potatos. Quick and easy and they are freezable so they last a lot longer) Bake for 15 minutes at 350 degrees until lightly golden brown.

3)1 cup of Sloppy Joe Mixture makes 4 delicious sandwhiches.
