What can I do with a slow cooker ham...

So now that I am cooking again I better get back in the groove of healthy and time saving meals!
I will definitly share a post on surviving HG soon.

Here is my first recipe - let me share my tips and tricks on this recipe first. I used Ham I had in the freezer. We purchase a small ham from BJ's, you know the boneless kind that is extra lean and it can fit in your crockpot.

This particular ham will get a family of two approximatly 6 portions!Yes that is right 6 portions and it only cost me $6.87 for the ham!

Here is a sample of what you can do with this one ham :

Meal 1: Sliced Ham: We ended up putting it in the crockpot with a 1/2 can of crushed pineapple and 1/4 cup of brown sugar one night for dinner. Then we froze the rest in individual portions for other recipes. Save the other half of the can of pineapple, but divide it in half and put it in two baggies and place in freezer.

Meal 2 and 3: Ham and Pineapple Pizza: chop up 1 portion of the ham and sprinkle on pizza with 1 baggie of crushed pineapple from the freezer. I saved sauce from my spaghetti and meatball recipe(see older post) and I also made my own pizza crust which creates two 12 inch pizza crusts. Guess what you can make this recipe twice!

Meal 4: Peruvian Ham and Rice (I will share this one soon if you are at all interested) It was my favorite recipe my babysitter passed down. It has rice, ham, raisins, peas, and carrots with turmeric. DELICIOUS and what a tasty - cheap meal. You will use the veggies from the white bean and ham soup.

Meal 5: Ham and Cheddar Quiche (This serves 4 with a vinagrette salad)

Meal 6 and 7: White Bean and Ham Soup - That is right this soup gets you two meals - it actually provides approximatly 7 cups of soup.

WHITE BEAN AND HAM SOUP


1 portion of ham (thawed and diced)
3 carrots peeled and chopped
3 stalks of celery chopped
1/2 cup of frozen peas
1/2 cup of frozen corn
1 32oz carton of low sodium chicken broth
1 16oz can of low sodium pinto beans
1 16oz can of low sodium cannellini beans
1 tsp of garlic powder (or 1 tbsp of minced garlic)
1 tbsp of dried minced onion (or 1/4 cup of diced onion)
1 tbsp of dried thyme
1 tsp of dried parsley

Saute celery, carrots and spices until tender, approximatly 3 to 5 minutes, in a dutch oven.
Combine other ingredients with mixture in dutch oven and simmer for 20 to 30 minutes.
