Easy and Quick Burritos

This recipe made enough for 8 large burritos. I made two meals and four lunches out of it with a side salad.

Easy and Quick Burritos

1 - 16 oz can of corn (drained)
1 - 16 oz can of black beans (low sodium)(drained)
2 - packages of grilled and ready southwestern(Tyson) chicken strips - you can use Perdue shortcuts or any type of grilled chicken strip. I got two free packages by coupons. If you use a brand that is not southwestern style - you will want to add a tablespoon of taco seasoning for flavor.
1 - cup of rice
2 - cups of water
1 - tbsp. of cilantro
1 - jar of salsa (we like mild)
2 - cups of cheddar or mixed cheese
8 - tortillas

Combine corn, black beans, chicken strips, rice and two cups of water in a sauté pan with lid. Stir together and cook on medium - low for 10 to 15 minutes depending on your stove. Add cilantro and simmer for 1 to 2 minutes.

Put approximately 1/2 to 3/4 cup of mixture in each tortilla (enough to allow them to be stuffed and folded.

You will make approximately 8 burritos. Put 4 in each baking dish. Cover each baking dish with 1/2 jar of salsa and 1 cup of cheese.

You can freeze one baking dish with four burritos for a future meal.

Bake at 350 degrees for 15 to 20 minutes until cheese is golden.
