Freezer Meals -Chicken - Part One

I am beginning an adventure into converting 50% of my freezer into meals that are ready to go.
Today I was able to make 4 freezer meals that all you have to do is defrost and put into the slow cooker!

Honey Mustard Chicken


1 lb of chicken breast
1/4 cup of dijon mustard
1/4 cup of honey
1 tbsp of butter
1 tsp of garlic powder
1 tbsp of Worcestershire sauce
1/4 cup of diced onion

Put all ingredients into a gallon size bag and coat the chicken. Freeze until ready to throw in the slow cooker on high for 4-5 hours. Shred and serve over potatoes, rice or noodles.


Ginger Chicken Stir Fry

1 lb of chicken breast sliced
1/4 cup of ginger soy sauce
1/2 cup of orange juice
1 bag of frozen stir fry peppers (about 2 cups)
1/4 cup of diced frozen onion

Put all ingredients into a gallon size bag and coat the chicken. Freeze until ready to defrost and throw in the slow cooker on high for 4 - 5 hours. Serve over rice. I like to garnish with a few mandarin oranges.

Chicken and Bean Stew

1 lb of chicken breast diced
1/4 cup of diced frozen onion
1 can of pinto beans (you can also use a mix of beans if you prefer)
1 can of petite diced tomatoes
1/2 tbsp of garlic powder
1 tsp of chili power (you can add additional if you like things on the spicy side)
1 tsp of cumin
1 1/2 cups of frozen diced potato
1 cup of frozen corn

Put all ingredients into a gallon size bag and coat the chicken. Freeze until ready to defrost and throw in the slow cooker on low for 6-8 hours. I normally add a little chicken broth (1 to 2 cups) depending on the cons1/istency once defrosted. Serve with cornbread and sour cream.

Chicken Pot Pie

1 lb of chicken breast diced
1/4 cup of diced frozen onion
1 tsp of garlic power
1 tbsp of everyday seasoning (mix of parsley, thyme and oregano)
1 cup of mixed frozen vegetables
1 cup of frozen diced potato
1/2 cup of celery

Put all ingredients into a gallon size bag and coat the chicken. Freeze until ready to defrost and throw in the slow cooker on low for 6-8 hours.
I add in 2 cups of chicken broth and 1/4 cup of heavy cream once defrosted to give it a good consistency. About 30 minutes before serving I prep biscuits to serve as the topping or I add 1 box of gnnochi to make it a dumpling type recipe.
Yummy!
