Spanish Rice (Veggie Style)

Hello All:

I love when I can use the fresh herbs I plant in the garden to make a delicious quick meal! I love it even more when you can make a delicious and healthy meal in under 20 minutes.

Try this recipe out and let me know what you think - we love it!

Spanish Rice

1- box of rice-a-roni red beans and rice (I used this because I got it free at the grocery store but you can easily make the same thing with 1 cup of rice, garlic, cumin, chili powder, minced onion and a can of red beans)

1 cup of frozen corn

1 package of Morningstar soy crumbles (they taste exactly like ground beef)

1 can of diced tomatoes

2 tbsp. of freshly diced cilantro

2 cups of water

Pour rice mix into a sauté pan and lightly toast over medium to low heat for approximately 3 minutes. Add the rest of the ingredients (except the cilantro) and cover with 2 cups of water. Stir together and cover with lid. Simmer on medium/low for 20 minutes. Add cilantro and cook for 5 minutes with occasional stirring on low.

This will make enough to serve you two dinners! Feel free to add in diced pepper if you are feeling adventurous.
