My husband loves peanut butter and chocolate! So if I have the chance to whip him up something special I will!
Here is my recipe for a quick and easy dessert. Everyone will want a second helping on a hot summer day!
Frozen Chocolate Peanut Butter Pie
1- Oreo Pie Crust
2 - Cups of Reduced Fat Creamy Peanut Butter
2 - 3 Cups of Low Fat Chocolate Ice Cream
2 - Cups of Fat Free Whipped Topping
1/2 cup of chocolate chips (I only had white chocolate - but any type would be great)
Spread 1 cups of Peanut Butter on the bottom of the Oreo Pie Crust as a layer.
In a medium bowl, combine Chocolate Ice Cream and 1 cup of Peanut Butter. You can combine by stirring - the ice cream should be softened. (this takes about 5 or so minutes of sitting at room temperature) Don't worry if it becomes a little bit melted - it will freeze up again.
Pour Chocolate Ice Cream mixture on top of Peanut Butter in the Pie Crust. Smooth out using a spatula.
Layer 2 cups of Whipped Topping on top of Chocolate Ice Cream Mixture. Sprinkle chocolate chips on top.
Freeze for 4 -6 hours before serving!
