Moist and Crispy Pork Chops

I love pork chops - they are awesome in the slow cooker but sometimes you just want something crispy.
I served mine with rice and Brussels Sprouts and even my 1 year old loved it!

Moist and Crispy Pork Chops
serves 4

4 boneless pork chops (trimmed of excess fat)
1 cup of plain bread crumbs
1/2 cup of mayonnaise (I prefer olive oil based)
1 tbsp. of minced onion flakes
1/2 tbsp. of garlic powder
1/2 tbsp. of old bay
dash of salt
dash of pepper


Turn oven to 350 degrees.
Line a baking sheet with tin foil. Place a wire cookie cooling rack on top. Spray with olive oil.
Pat pork chops with a paper towel to dry.
Combine plain bread crumbs, salt, pepper, old bay, garlic powder and minced onion in a shallow bowl.
Put mayonnaise in a second shallow bowl.
Coat the pork chops with mayonnaise and then dip them into breadcrumbs. Push down to coat the entire pork chop with breading.
Repeat.

Baked at 350 for 25-30 minutes until it registers 165 degrees. Let cool for 5 minutes on baking rack.
